For A Unique Thanksgiving, Try A Turkey Fryer



For those who have been pondering deep frying a turkey for Thanksgiving, give it a test run beforehand.   That way, you can get some valuable experience and not disappoint the hungry crowd awaiting a feast on the tabletop in your living room.
A typical turkey fryer kit comes with a natural burner and poultry holder, a basket, a large stock pot, a lifter and a thermometer.  The burner uses a standard tank with propane that usually has to be bought separately. Current burner units are designed to be much closer to the ground to increase stability.

Lower cost units use a cast aluminum stock pot and a steel burner, while higher-end units include a stainless steel pot and burner. Some stock pots may have an integrated knob to drain the oil. The poultry holder consists of an aluminum or stainless steel disk with a metal rod formed into a loop with the ends affixed to the center of the disk. The loop is placed through the sketcavity of the ,turkey and the lifter is used to  lower and remove the turkey. If a basket is used, it includes a bail that is grabbed by the lifter. The thermometer has a long probe and is used to monitor the temperature of the oil. The fryer can also be used to cook other poultry and seafood. The stock pot lid is used to cover the pot only when not actually frying or when preparing other foodsought  by boiling in water. Heavy gloves and an apron are recommended.

Some vendors, like Thermos and Char-Broil, now offer an add-on temperature control valve. This consists of a valve that goes between the propane tank and the burner and a lead with a thermal sensor. The sensor is placed into the oil and the valve adjusts the flame to achieve a constant temperature.

Electric turkey fryers have been introduced that can be used indoors. Although the electric fryer does not heat up as fast as with propane, it includes a timer and a thermal safety shut-off. Electric fryers can also be used to prepare other foods by frying or boiling.

You'll want to buy some peanut oil and test out some new dry rubs or injector recipes.  Deep frying a practice turkey a month early will increase your comfort level on Thanksgiving. Let’s face it when working with five gallons of boiling oil you can use all the comfort you can get. And you’ll also get to enjoy a best rated wonderful deep fried turkey without all the stress and the hassles that the holidays bring.

Your prep work should include making sure your propane tank is full and check to see if your fire extinguisher is charged and ready for action. Be sure to find your gloves and goggles and collect all the necessary equipment that you’ll need for the big day. Put it somewhere on hand like the garage. This way when Thanksgiving comes you’ll have one less thing to worry about.

And remember when you deep fry a turkey you won’t have turkey drippings to make gravy. October is the perfect time to plan your gravy options. You could fry up the giblets and neck in a pan and use those drippings to make your gravy. Or you could buy your gravy at the store. The deep fried turkey will be moist enough that gravy will be more important for the mashed potatoes but it’s still a good idea to plan ahead.  Side dishes grilled on a Weber, Brinkmann, Huntington, or Ducane grill often complement the tuirkey nicely.

Here’s an excellent injector sauce recipe to try:
Buttery Injector Sauce
1/2 cup Chicken Broth
4 tbsp Butter
1 tbsp Lemon Juice
1/2 tsp Garlic Powder
1/2 tsp Black Pepper
Salt to taste

Melt Butter in a pan or microwave
Mix butter in a bowl with the rest of the ingredients except salt
Add salt slowly and taste. The sauce should only taste slightly salty
Whisk or use electric mixer until well blended and ready to be injected
Inject mixture into turkey
Place turkey in oven bag or in a large bowl with a cover
Refrigerate overnight

Whether it’s your first deep fried turkey or you are an old pro, try using October to practice. It will make Thanksgiving a little more relaxed and enjoyable, not to mention gets you good reviews among family members. The more prepared you are, the smoother your day will go and that’s something to be thankful for.
